My Go To Recipe...Chili Mac

I try to cook from scratch as much as I can. It's cheaper, healthier and just tastes better! This isn't from scratch per say, but its yummier than any hamburger helper and almost as easy. This is adapted from Cook's Illustrated, but I am not sure they would recognize it anymore.


Ingredient List:
Coconut oil or butter
1 onion
3 cloves garlic
Chili powder
Cumin powder
1 pound ground beef
1 can marinara sauce (about 3 cups)
2 medium zucchini
1/2 pound rotini pasta (corkscrew pasta)
4 handfuls of grated cheese

I use 12 or 13 inch skillet, preferably one with a lid although I often use aluminum foil in a pinch. You will also need a cheese grater, a cutting board and a chiefs knife. I often use a garlic press as well. This will serve 4 adults with a salad. You can easily double the recipe in a dutch oven but may need to increase the cooking time.

1) Heat up your oil and chop up your onion, saute your onion for about 10 min.

2)While the onion is cooking, grate your zucchini with a cheese grater.

3)Add garlic, a cupful of chili powder and a half a cupful of cumin.  Saute for about a min.

4) Add ground beef, and cook until there is no red left, but don't overcook it. Please, for the love of all good things, don't overcook your meat!

5) Add marinara sauce, zucchini, and pasta. (Note: if you don't have any zucchini, just add 2 cups of water instead. In the winter time, you can add diced sweet potato or butternut squash instead.)

6) Cover, bring to a boil, and simmer for about 15 min, stirring it several several times.

7) Take skillet off the heat, and mix in the cheese. Dinner is served!
